Easy Recipe During Bankruptcy in Minneapolis, Minnesota
If you are in bankruptcy or not, who doesn’t love a good, easy, cheap meal that will feed the whole family? The below recipe is for crockpot fajitas. It is tasty, easy, and cheap.
Ingredients:
1lb of Chicken Breasts
3 Bell Peppers
1 Yellow Onion
1 Jar of Your Favorite Salsa
Fajita Seasoning Packet
Tortillas
Optional:
Sour Cream, Cheese, Lettuce
First, you will prep the meal by cutting the bell pepper and onions into strips. Then, place the chicken in the crockpot, either directly in the crockpot- or if you are trying to be mess-free, use a crockpot liner. Next, place the peppers and onions on the chicken. Pour the jar of salsa on top of the chicken and bell peppers, then mix the seasoning packet into the salsa. Cook this one low in the crockpot for at least 8 hours. It can also be cooked on high for about 4-5 hours. (*always test your chicken to make sure it is done before eating*) When the time is up, you will shred the chicken; this can be done directly in the crockpot. Finally, you are ready to serve the fajitas.
Meal prepping and planning is an easy way to save money in your budget. The above meal can be used for meal prepping and, depending on your family size will have a decent amount of leftovers. When going through bankruptcy, most clients try to organize their budget and save a few dollars where possible. Hopefully, this recipe can help with just that! Enjoy.
